When using OpenAI realtime model with whisper STT, we are billed for STT seperately but livekit currently records no metadata for cost estimation, I made this PR to addresses this obervavility hole - would appreciate review as it was reviewed a long time ago but seemed to have got lost before merge https://github.com/livekit/agents/pull/5029/changes
